Cranberry Orange Granola
I've never been much of a cereal girl but I do enjoy a good granola from time to time and let me tell you, this granola makes me want a nice big bowl with some cold almond or coconut milk on these hot Chicago mornings. Plus, I will nom on pretty much anything that's cranberry orange.
Enjoy as a bowl of cereal, with yogurt or just plain by itself.
So here's what you need to get started...
Ingredients:
- 2 cups Rolled Oats
- 1/2 cup Buckwheat Groats
- 3/4 cup Chopped Almonds
- 1/2 cup Sweetener (maple or honey)
- 1 tbsp Coconut Oil
- 1 tbsp Vanilla
- 1 tbsp Chia Seeds
- Zest of 2 medium Oranges
- 1/4 cup dried Cranberries
Preheat your oven to 350 F.
In a large mixing bowl, add all the dry ingredients together, zest your orange on top and then add your wet and mix together. Don't forget to enjoy some deep sips of air when you mix this, the smell is intoxicatingly delicious.
Take a baking sheet lined with parchment paper and spread the mix evenly across the baking sheet. Pop it in the oven for a total of 25 minutes. Halfway through, mix up the mixture to make sure everything browns.
That's it! Make sure the granola is completely cooled before storing it in an air tight container.
