Peanut Butter Mousse Parfait
One of my absolute favorite guilt-free sweet tooth satisfying recipes I have. This has no refined sugar, a low glycemic index and packed full of protein and nutrition for your body.
Here's What You Need for the Mousse:
- 1 package of Organic Silken Tofu
- 1/2 cup Natural Peanut Butter (smooth or chunky, it won't matter since it will be smoothed out in the processor)
- 1/2 cup Honey
- 1 tbsp. Vanilla Extract
Gravel:
- Crushed Peanuts
- Cocoa Powder
- Cacao Nibs
What To Do:
Combine all ingredients in a food processor and process until completely smooth and combined. Give it a taste, if you want more of a flavor to come through, add a little bit more until your desired flair is achieved.
Spoon into small cups and layer crushed peanuts, cocoa powder and cacao nibs . Garnish the top with more peanuts and nibs and enjoy.
Store any left over mousse in the fridge in an air tight container for about 4-6 days or for a more ice cream like consistency, store in the freezer.
