Acai Bowl
My new obsession! Acai! This powerful little fruit is native to the Amazon and is packed with antioxidant-rich nutrients. This small super-berry is a great base for the amazing-ness that is the Acai Bowl or an Acai Smoothie Bowl.
So just like any smoothie, you can throw in whatever you heart desires however this is my go-to staple acai bowl recipe. This powerful bowl is great for post workouts packed with protein and good carbs or simply as a solid breakfast that will keep you feeling full and see you through until lunch time. So here's what to do:
Prep: Soak 1/2 cup cashews for at least 4 hours but if you can, remember to soak overnight the night before.
Serving Size: Makes 2 bowls
Smoothie:
- 1/2 cup of cashews, soaked and drained
- 1/2 cup frozen blueberries
- 1 frozen banana
- 5 large fresh strawberries
- 1 pack of frozen Sambazon Acai puree (unsweetened is preferred since all the fruit has plenty of natural sugars)
- 1/4 cup of non-dairy milk (unsweetened almond or coconut milk is my fave)
Toppings:
- 1/4 cup granola-I have a granola options on my blog but my favorite is my raw small batch granola and I'll be posting the recipe soon.
- 1 1/2 tbsp chopped up chunks of dried coconut or coconut flakes
- Fruit of choice-I prefer sliced up strawberries or banana, some bluebs, maybe some pomegranate seeds, whatever you're in the mode for!
